Zucchini Bread

I made zucchini bread for the first time ever last night. Gosh is that stuff good. My boys ran to the kitchen three separate times for "another bite." Has anyone else ever attempted this yummalicious bread?

Here is the recipe I used.

INGREDIENTS
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts ( optional)


DIRECTIONS
Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

I peeled the zucchini with a carrot peeler and then used a large hole cheese grater and grated it. It was fun and easy.

Not zucchini, but banana. Yum!

I love zucchini bread! My recipe is very similar. It is so yummy! I always use the whole zucchini skin and all.

Yeah, I saw comments on the internet about using the whole zucchini skin, Lois. I just was a little unsure. I might do that next time. :)

I'm with Manda. Banana bread...mmmmmmm. I haven't had zucchini bread in a long time. Maybe I'll have to try the recipe.

The boys & I love it, although I didn't make it this year because our neighbor did and brought some over. Next time, be a little risky and keep the skin on! :-) It tastes just as yummy and gives you a lot more good stuff inside!
